Aarhus University, Department of Food Science, offers a position at the post doctoral level within the area of cultured meat, starting 1 October 2022.

Area of work

Cultured meat is a future way to produce the same nutrients as traditional meat, with reduced impact on the environment. For cultured meat to enter the market, an affordable product of good taste is a prerequisite for success. To address this challenge Department of Food Science has a portfolio of new research projects with an open post-doc position. This is part of a larger investment in cellular food at Aarhus University, which is lead from our group at Department of Food Science.
The Postdoc on taste enhancement in cultured meat is connected to a project that focuses on taste and the mechanisms related to its development where cultured muscle cells with induced lipid content will be central. Taste is addressed by analyzing e.g. protease activity and lipid oxidation in the cultured cells. This position is part of a collaboration project with an international partner and will require travel.

Qualifications

  • A PhD degree in a relevant area e.g. food science, molecular biology, molecular medicine or similar
  • Documented experience in cell culturing, cell/molecular biology techniques, food science, meat science

Shortlisting is used. This means that after the deadline for applications – and with the assistance from the assessment committee chairman, and the appointment committee if necessary, – the head of department selects the candidates to be evaluated. Salary depends on seniority as agreed between the Danish Ministry of Finance and the Confederation of Professional Associations.
